Simply Vegan Pesto Salad

It continues to be the simple things in life that give me the greatest fullfilment.

This salad is one of those simple pleasures, easy to make, nutritious and delicious.

Always add your own signature to it, I never manage to make the same dish twice, there is always something that either gets added or taken away and that is the simple pleasure in change.

Ingredients: (pesto dressing)

  • Shop bought vegan pesto (I would love to claim I made everything from scratch, but I can’t, so yep it’s true the pesto was an organic vegan pesto).
  • 1 – Avocado
  • A squeeze of fresh lemon
  • A glug of extra virgin olive oil
  • A pinch of sea salt

Method:

Play with the quantities until you get your desired flavour, place everything into a salad bowl and mix into a either a smooth or chunky consistency.

Warm Salad Ingredients:

  • Millet
  • Garden peas
  • Rainbow Chard
  • Spinach
  • Button Mushrooms
  • Clove of garlic
  • Red onion
  • Red pepper

Method:

It is one cup of millet to two cups of water, bring to the boil and simmer, cook with the garlic and pinch of sea salt. When you notice the millet has absorbed all of the water add your garden peas and onion, when they have softened remove from the heat. Note I also add an extra tsp of vegan pesto at this point.

Add everything to the salad bowl stir and serve.

Simply Yummy.
