this mousse is so simple to make hence it is a staple in a busy home like mine. Each time I make this mousse I throw something different and new into the mix; this time Cordyceps and Chaga mushroom powder was the extra added ingredient. In case you are wondering why we only used 1/4 of the sachet well the rest of the sachets made a nice cup of tea 😀.
- 1/4 maybe less of a sachet Cordyceps Mushroom Drink by Four Sigma Foods.
- 1/4 maybe less of a sachet Chaga Mushroom Drink by Four Sigma Foods.
- 2tbsp cacao powder
- 1 tsp of carob powder
- 1 tsp of granulated molasses
- 1 tsp of Wild Honey
- 1 tsp of Chia seeds
- 1 tbsp of coconut oil
- 2 avocados
- 300ml of filtered water (not exactly sure how much water I used 😁)
- Pinch of rock salt
- 8 – 10 dates (pitted)
- 100g of cashew nuts
I leave the cashew nuts, chia seeds and dates to soak in the water for 10 or so minutes, then add the remaining ingredients to the fast speed blender. The blending part is where the skill lies because you (I should say I) want a thick and creamy mousse, which means I only use enough water to make it go round. As the mixture blends it catches air pockets and stops, which requires me to give it a little shake and the air pocket will pop and away I go again.
Start slow with the blending and be patient with starting and stopping because of the air pockets, in no time your have the best mousse ever; so good my 4 year old son devoured the whole thing in 2 seconds.
To get it really thick and creamy leave in the fridge for a good chunk of time.
