Raw Cacao & Walnut Fudge

I must first express that the inspiration for this recipe came from David Wolfe and I have only changed one ingredient and added another, however I had great fun making this fudge with my wonderful 4 year old son and we had even more enjoyment eating it 😀

1 Cup – Walnuts
1/2 Cup – Cacao Powder
1/2 cup – coconut oil
1/2 cup – fresh dates (pitted)
1/2 cup – dried apricots
1 tbsp – Maple Syrup
2 tsp – vanilla extract
1 – pinch of Celtic sea salt

Recently I have been doing simples posts and this qualifies, you simply place all the ingredients into a high speed blender and blend until the mixture is ground down to the right texture (remember walnuts release a lot of oil) so the texture will be dough fudge like with separated walnut oil.
Once you have placed the fudge into a dish place it in the freezer for one hour this will harden the walnut oil and combine all the elements together; after the hour transfer to the fridge, dice into desired portion sizes (very filling be warned) when ready to eat and enjoy, oh add the toppings before freezing we used walnuts and cacao nibs you can add according to your desires, I think berries of some kind would add a nice something extra to the dish.

To you all in great health
