Pickled Sambo

It’s the simple things in life that put a smile on my face; especially when life revolves around the sometimes chaotic upbringing of children and family life in general where time is precious .

I simply cut into a walnut and rye loaf of bread and spread whole mustard on one slice and a ginger and onion chutney (both shop bought, no additives but slightly high on the sugars in the chutney) on the other.

Next I added sliced avocado, kale, sauerkraut, Sundried tomatoes, olives, cornichons and pickled onions. Sliced the sandwich in half and enjoyed.

As I said simples.
