xmas birthday cake

So how does a birthday cake become a christmas tree you may ask? well the answer is simple you ask your approaching 4-year-old son what they want for their birthday and they answer a Xmas tree cake; simple.

The recipe has been adapted from Russel James (The Raw Food Chef), which was originally called the Carrot and Orange Cake.

Those of you who know me know I am not really a fan of measurements, however as mention this is an adopted recipe and so I will provide the details:

Base Ingredients:

3 cups – finely grated carrot (I used rainbow carrots, for colour reasons).IMG_2318

2 cups – ground pecans

1/4 cup – chopped raisins (I used currants)

1 tsp – nutmeg (I did not have this in the

stores so mine was made without).

1 1/2 tsp – Mixed Spice

1/2 tsp – Salt (I used Celtic Sea Salt)

1/2 tsp – Orange Peel Zest (I left this one out )

1/2 cup – Desiccated CoconutIMG_2328

Date Paste = 1 cup fresh dates (pitted) and 1 cup freshly squeezed orange juice.

Frosting Ingredients:

1 1/2 cups – Cashew Nuts

1/2 cup – water

2 tbsp – agave syrup (I used maple syrup)IMG_2329

3 tbsp – Coconut Oil (I used 2 tbsp of Cacao Butter)

1 tsp – Vanilla Extract (ooopppsss or funny, my wonderful wife had written down 1 tbsp, which I added and must confess it packed a punch, but maybe it should be 1 tbsp?)

1/4 tsp – Salt (we used Celtic Sea Salt.

Topping Ingredients:

Vanoffee Chocolate Bar (from the Raw Chocolate Company)

Bear Fruit (Strawberry)


Cacao Nibs

Desiccated Coconut

Star Anise


First prep the base and its as simple as grate the carrots and pop them in a mixing bowl and all the ingredients; I used a coffee grinder to ground the pecans and the date paste was made using a Vitamix (High Speed Blender). Once all ingredients are in the bowl mix until blended together, then add to a dehydrater sheet (or foil if using an oven) and shape as you desire in our case an Xmas tree. Then place in the dehydrator and dehydrate for just over 12 hours and it will need turning at some point (regular setting) or low heat in oven and it will take much less time to cook.

Next place all the frosting ingredients into a high-speed blender and blend until a thick consistency is achieved, place the mixture into a bowl and then place in the fridge and leave to set until the base is dehydrated/cooked depending on the method you have chosen.

Once the frosting has been added to the base the fun begins and you get the chance to decorate your tree, but the magic really happens when a smiling child dives in and enjoys every mouthful.

Note as well that there was a lot of the frosting mixture left over and I will do a couple more posts to show how I used that to yummy effect.
