This has taken literally 5 minutes to put together, however for the best results you will want to leave them in the fridge for a couple of hours to harden. Bursting with flavour and wonderfully balanced with fennel, cardamom and mint; a great snack that will not throw you out of balance.
200g – Cashew Nuts
6 – fresh dates pitted (or dried dates rehydrated)
3 – Cardamom pods
1tsp – fennel seeds
10 – mint leaves (1tsp essential oil of peppermint)
1tbsp – Cacao Powder
Into a high speed blender go all the ingredients; blend until gooey. Mould mixture into bar shapes place on a plate garnish with desiccated coconut and pop in the fridge.
