Mother’s Day, Lime and Gogi Berry Cheese Cake.

Yesterday as we know was Mothering Sunday and I hope all mums and their families had a great day.

For my mum I decided to make last minute a raw delight and i was inspired by a raw lime cheese cake I had tried a couple of days earlier from the local health food shop, this last minute decision is why the post is being published after mothers day and not before and i share simply because it was so yummy that it can be rawesome for any occassion.

Equipment Needed:

Vita Mix or any high-speed blender and an 8 inch cake tin.

Base Ingredients:

  • 250g – Hazelnuts
  • 1 tbsp – Flax Seed
  • 1 tbsp – Coconut Oil
  • 6 – Dates
  • 1 – pinch of Himalayan Pink Sea Salt

Filling Ingredients:

  • 250g – Cashew Nuts
  • 100g – Coconut Oil
  • 2 tbsp – Maple Syrup
  • 1-2 – Freshly Squeezed Limes (Taste mixture add more if you need to)
  • 1 – pinch Himalayan Sea Salt

Topping Ingredients:

  • 1 – Handful of Gogi Berries
  • 1 – Handful of Chopped Almonds

Method:

Place the base ingredients into the blender and blend until you get a mixture that will stick together and then line the base of your cake tin with the mixture.

Place the filling ingredients into the blender and blend until you have a smooth thick texture and then pour over the base and spread evenly.

Then take some almonds chop them and sprinkle over the top and do the same with the gogi berries.

leave over night or for a couple of hours in the fridge and hey presto you will have yourself a very filling, nutritious and delectable raw cake that the whole family will love.

Serve with a smile in the knowledge you will be hailed a hero of the kitchen and yet it was all so very simple but that life hey the simple things.

Note: when blending the filling keep tasting to see how much lime you want to add, 1 lime produced a subtle lime flavour more will intensify the result.

Great Snacks

Hi everyone

Snacking is such a common thing these days and may well have always been that way, some experts will tell you to not snack and stay with your three meals a day whilst others will tell you that to graze through the day is going to bring you the rewards of great health and vitality.

For me I am a bit of both, somedays I love to graze and other days I like to be patient and wait for meal times to arrive and on an annual basis I also love to fast. The attached blog Great Snacks2 looks at 3 yummy and nutritious recipes that may set you up for a grazing day or fill you up for a three square meal day, either way I hope it brings you great health and vitality.

Kale Chips

 

Equipment Needed:

Dehydrator (you can use the bottom shelf of an oven on a low setting).

Ingredients:

  • Kale – 2 Bunches
  • Olive Oil – A glug
  • Apple Cyder Vinegar – A Glug but not as much as you did with the oil
  • Inspiral Cafe Pizzeria Seasoning – a generous helping to suit your taste buds. This seasoning contains dried kale, baobab, cashew, onion, nutritional yeast flakes, flax seeds, sumac, Himalayan sea salt, oregano, basil and black pepper.

This recipe depends upon how many chips you want to make. You only want enough oil and vinegar to coat not soak the kale leaves, as for the seasoning you season to your liking.

Method:

Using a big bowl place the glug of oil and vinegar at the bottom, then begin to remove the amount of kale you want to use from the their stalks/stems and place into the bowl with oil and vinegar, add your seasoning and mix all the ingredients together.

Place on a dehydrator sheet and set your dehydrator to 115, it will take between 2 – 4 hours to dehydrate depending on how much Kale you have used. If you do not have a dehydrator then the bottom of an oven on low setting will do the job just grand.

Place into a bowl and share them around.
